WThis is a simplified interpretation of a beverage featured on a new cocktail list. This is a party-sized pre-mixed which is bursting with the flavours of the holiday season, which makes it ideal for hosting a holiday party. Save the extra citrus syrup you can use for breakfast cocktails, sweets, or to mix more rounds of the drink.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Place the listed ingredients in a pot, bring to a light boil, mixing to dissolve. Next, take off the stove allowing it to reach room temperature fully. Pour into a sealable bottle, cap it and refrigerate it in the refrigerator, it will last for up to a month.
Preparing the Batch Mix: Mix every liquids into a big jug, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml of the cocktail base to a cocktail shaker containing ice, gently stirring carefully for one minute to cool it down. Strain to a chilled martini glass or similar, top with the cranberries and complete it using a quick spritz of the essential oil over the top.
